Bloomin' Pizza Bread


1 loaf of garlic Parmesan bread (i found mine at walmart)
12-16 ounces bag of shredded italian cheese
1 (3.5 ounce) package pepperoni mini size or half the large ones
3 Tablespoons butter, melted

pizza/marinara sauce for dipping

Directions:
Preheat oven to 350 degrees.

Cut the bread lengthwise and widthwise without cutting through the bottom crust. This can be a little tricky going the second way but the bread is very forgiving.

Place bread on a foil-lined baking sheet and insert shredded cheese and pepperoni between cuts. . Drizzle or brush butter over bread with a pastry brush.

Wrap bread completely in foil and bake at 350 degrees for 15 minutes. Unwrap the bread and bake 10 more minutes, or until cheese is melted and pepperoni is a little crispy.

ZUCCHINI BREAD WITH CHOCOLATE CHIPS & COCONUT

3 cups shredded zucchini

1 cup oil

2 cups sugar

3 eggs

3 cups flour

3 tsp cinnamon

1/2 tsp baking powder

1 tsp salt

1/2 cup coconut

1/2 cup nuts (optional) We added walnuts to one loaf.

1/2 cup chocolate chips

1/2 cup butterscotch chips (optional) we added these to ours.


Preheat oven to 350 degrees. Blend zucchini, oil, sugar and eggs. Add dry ingredients. Mix well. Add coconut, (nuts) and chocolate chips & (butterscotch chips). Place in greased pans and bake for 1 hour.

LeNell's Great Bread

Finally I made “the best” bread

In Bosch bowl with hook

Add
6 cups warm water
2 T salt
2/3 c. honey
2/3 c. oil
9 c. whole wheat flour


While mixing on speed 1 add
2 eggs
2 ½ T. saf-instant yeast
When motor bears down turn to speed 2
While mixing on speed 2
Add approximately 6 more cups of wheat flour until dough pulls away from side of bowl

BE CAREFUL NOT TO ADD TOO MUCH FLOUR
Let knead for 8 min.
With oil on hands make pretty loaves and put in bread pans
I like to roll out a couple of them and spread butter, brown sugar, cinnamon and nuts
Roll it back up into a loaf
Put a dish towel over them and put into a warm oven 180. Make sure oven is off.
Let rise until double

Bake 350 for 30 to 35 min. Makes 6 loaves

Take one to a neighbor and freeze the rest!!

LeNell’s Corn Bread

(healthy and moist)

Mix dry ingredients
3 c. wheat flour
11/2 c. corn meal ( I ground popcorn)
3 t. baking soda
1 ½ t. salt

Mix
3 eggs
1 c. (heaping) sugar
¾ c. applesauce
½ c. oil
Mix the two together. Don’t over stir
Bake 350 22 to 26 min
I sprinkle sugar on top before baking

Baking Powder Biscuits

1 C. whole wheat flour

1 C. unbleached white flour

½ tsp. salt

¼ C. shortening

1 T baking powder

¾ C. Skim Milk

Mix dry ingredients. Cut in shortening. Add liquid ingredients, and stir just until blended. On a lightly floured countertop, gently knead dough for 30 seconds. Pat or roll out dough to ½ inch thick. Cut into 2 inch circles using a biscuit cutter, or cut into squares. Place on a nonstick baking sheet. Bake at 425 degrees for 10-12 minutes. Makes 15 -18 biscuits.

Stir ‘n Drop Biscuits

1 C. whole wheat flour

1 C. unbleached white flour

1 T. baking powder

½ tsp. salt

¼ C. oil

1 egg, beaten

½ cup skim milk

Mix dry ingredients. Add oil, egg, and milk. Stir only until all ingredients are combined. Drop onto a nonstick baking sheet or on top of a meat pie. Bake at 425 degrees for 12-14 minutes. Makes 18-20 biscuits

French Bread

At least once a week growing up (usually on primary day), we would come home to the smell of fresh baked bread. Grandma would make her French bread, so yummy! When I was too old for primary it would be my job (since Mom, LeNell, Annette, JoAn and John would be at primary) to put the loaves in the oven after they were done raising. My friend Patsy would always come over on those days just to eat Grandma's bread. This recipe is pretty close to hers:

2pkgs dry yeast
1 T. salt
2-1/2 c. very warm water
3 T sugar
5 T veg. oil
6 cups unsifted flour
1 egg white

In large bowl, combine 2 c. hot water, sugar salt, oil and 3 cups flour. mix will by hand. Stir in proofed or dry yeast and add remaining flour. Dough should be barely sticky, add more flour if necessary. Mix well. Allow dough to rest for ten minutes and stir again. Repeat five times for a total of 50 minutes. Turn out dough onto oiled counter. Knead once or twice. Divide in two. Roll each half into 9x12 rectangle. Starting at long edge, roll loosely. Seal edges. place both rolls seam down on one large baking sheet. Gash top diagonally 3 times with sharp knife. (Grandma would cut slits with scissors down the long way of the loaf, we all loved watching her do this) Brush with beaten egg white. Rise 30 minutes. Bake at 400 degrees for 25- 30 minutes. Makes two loaves
(I think Grandma doubled the recipe because I remember ending up with 4 loaves that we all devoured) Thanks Mom for all that delicious bread.

Banana Nut Bread

6 over ripe bananas, mashed

4 eggs

1 ½ cup oil

1 c. sugar

4 c. flour

1 ½ tsp. salt

2 ½ tsp. soda

2 tsp. vanilla

2 cups chopped walnuts

Mix ingredients together well. Grease pans and pour in mixture halfway. Bake at 325 degrees for 45 min to an hour. Makes 3 regular loaves or 6 mini.

No Knead, Whole Wheat Bread

1 qt. warm water

3 T. yeast

2 T. salt

2 T. shortening

2 T. honey

2 eggs

7-8 c. whole wheat flour

Mix the water, salt, shortening, honey and then yeast. Let mixture stand a minute or two and add eggs and flour. Stir well, let stand to rise until double in size, about 45 min. Punch dough down and put into heavily greased pans. Rise about 15-20 min. Bake at 350 degrees for 1 hour.

Wheat Bread

7 c. whole wheat flour

2 T. salt

2/3 c. oil

2/3 c. honey

5 c. hot water

3 T. yeast

2 T. sugar

¾ cup water

In a small bowl mix 3 T. yeast, 2 T. sugar and ¾ cup water. Set aside.

Mix flour, salt, oil, honey and hot water in a Bosch mixer. Mix well and add the small yeast mixture.

Add 7-8 cups more flour while continuously mixing. Mix for 10 minutes. Put into 5 greased bread pans and let it rise for 30 min. Bake at 350 degrees for 30 min.

Cinnamon Rolls

Mix 1 T. yeast, 1 T. sugar in 1 C. warm water.

In a bowl mix:

1 melted cube of butter

2 eggs

½ c. sugar

½ tsp. salt

  1. Combine the two mixtures above and add 4 ¾ c. flour. Stir until well mixed with a spoon. (Knead dough if necessary to make it form into a nice ball). Dough should be a little sticky. Cover bowl with a damp, warm dish towel and let it rise until double (about 2 hours).
  2. Roll the dough into a large rectangle. Brush with butter and sprinkle with sugar, cinnamon and brown sugar (raisins or nuts may be added). Roll up into a log shape form the long side. Cut into 18 rolls with a piece of thread. Place on a buttered cookie sheet. Bake at 375 degrees for 14-16 min. Let cool partially before spreading vanilla butter icing on top.

Vanilla butter icing:

3 c. powdered sugar

1/3 c. butter, softened

1 ½ tsp. vanilla

About 2 T. milk

Mix powdered sugar and butter, stir in vanilla and milk. Beat until frosting is smooth and of spreading consistency.

Crescent Rolls

Mix 1 T. yeast and 1 T. sugar into 1 C. warm water. Let sit to rise.

In a bowl Mix:

1 cube melted butter

2 eggs (beaten with a fork)

½ c. sugar

½ tsp. salt

Combine the two mixtures above and add 4 ¾ c. flour. Stir until well mixed with a spoon. (Knead dough if necessary to make it form into a nice ball.) Dough should be a little sticky. Cover bowl with a damp, warm dish towel. Let rise until double, about 2 hours.

Divide dough in half, rolling each half into a circle. Brush with melted butter and cut into 12 pie shaped wedges. Roll up beginning at the wide end. Place on an ungreased cookie sheet, brush with butter again, and let rise until double, about 2 hours. Bake at 375 degrees for 13-15 min. Brush with butter. Makes 24 rolls.

Note: if you’re in hurry, place the rolls in a warm oven to raise them quickly.

Fry Bread

INGREDIENTS

* 4 cups all-purpose flour
* 1/2 teaspoon salt
* 1 tablespoon baking powder
* 1 1/2 cups warm water (110 degrees F/45 degrees C)
* 4 cups shortening for frying



DIRECTIONS

1. Combine flour, salt, and baking powder. Stir in 1 1/2 cups lukewarm water. Knead until soft but not sticky. Shape dough into balls about 3 inches in diameter. Flatten into patties 1/2 inch thick, and make a small hole in the center of each patty.
2. Fry one at a time in 1 inch of hot shortening, turning to brown on both sides. Drain on paper towels.

Albert’s Corn Bread

*from Muriel

1 ½ c. flour
2/3 c. Sugar
½ c. cornmeal
1 T. baking powder
1/3 tsp salt
1 ¼ c. milk
2 large eggs
1/3 c. oil
3 T. melted butter

Stir until just mixed (not too much) Bake 35 min. at 350

Original All-Bran Muffins

1 ¼ cups all-purpose flour
½ cup sugar
1 T. baking powder
¼ tsp salt
2 cups Kellogg’s All-Bran cereal
1 ¼ cups fat-free milk
1 egg
¼ cup oil

Stir together flour, sugar, baking powder and salt. Set aside.
In a large mixing bowl, combine cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Portion evenly into muffin pan (12) coated with cooking spray. Bake at 400 about 20 minutes or until golden brown. Serve warm.

To lighten: use 2 T. sugar, 2 T oil and substitute 2 egg whites for 1 egg.
Or substitute 2 egg whites for 1 egg and ¼ cup applesauce for ¼ cup oil.

Nutrition for 1 muffin Calories 160, fat 5 g, fiber 4 grams protein 4 g

(3 WW points per muffin)

Clara Lee’s Dinner Rolls

2 T. instant yeast
½ tsp sugar
1/3-cup warm water
Combine the above ingredients and let set while heating the milk

2 cups skim milk (heat 2 minutes in the microwave)
Add the following to the hot milk
½ cup oil
1/3-cup sugar
1 T. salt
2 eggs slightly beaten
5 to 6 cups flour
Yeast mixture

Stir with a knife. Just sort of whip it until it is mixed good. This is very sticky dough.
Let this rise for about 20 minutes
Stir down with a knife and let rise about 10 more minutes.
Stir again and form into rolls
Put on greased pan. Let rise until double and bake in 400-degree oven for 12 to 15 minutes.

Roll dough out and cut with a round cup and fold. (Clara Lee puts 9 rolls down and 4 across on large cookie sheet)

Sticky Buns!


** My best friend, Heidi, used to make these for me for my birthday breakfast. They are the best!

24 Rhodes rolls
1/4 C sugar
1 t cinnamon
1 C brown sugar
1/2 pckg of cook & serve butterscotch pudding
1/2 C melted butter

Place rolls in bundt pan. Sprinkle sugar, cinnamon, brown sugar, pudding mix (do not make) and pour butter over top.

Cover with foil and let rise overnight.

Bake at 350 degrees for 10-15 min. Remove foil and bake for another 20 minutes.

Turn the pan over on a plate and serve. Mmmm!

Pizza Bread


** We used to beg my friend to make this all the time. We had it a lot for picnics.

4 C flour
1 t salt
2 T sugar
1 T yeast (quick rising)
1 and 1/2 C hot water

Add in order and mix in bowl. Roll out into a fat oval (mentally divide into 3rds). Add sauce, cheese, toppings in the middle section. Cut slits in the two outer 3rd sections and rotate inward (kind of in a twist). Bake at 400 degrees for 18-20 minutes.

Add applesauce, cinnamon and sugar for dessert bread.

LeNell's Healthy and Yummy Bran Muffins


** These are the best things to keep in the freezer and just pop in the microwave before work. Shane even loves them.

6 C bran cereal (a whole box)
1 C boiling water
4 eggs
1 and 1/2 C sugar
3/4 C apple sauce
1/4 C oil
5 C flour (half wheat, half white)
5 t baking soda
2 t salt
1 quart buttermilk (or normal milk with 4 T of lemon juice - let sit for 5 min)

Mix 2 C bran with boiling water. Add eggs, sugar, oil. Mix salt and baking powder in with the flour. Add all at once and stir.

Bake at 400 degrees 18-20 min.

Makes a lot!

Crescent Rolls

1-1/2 Cup Shortening
1-1/2 Cup Sugar
9 Eggs
3 Tablespoons Yeast
3 Cups Warm Water
3 Teaspoons Salt
12 Cups Flour {11-14}

Cream shortening and sugar. Add eggs. Mix in yeast, water, and salt. Gradually add flour, knead. Let raise {about an hour or till doubled}, roll out, form into rolls and let rise again.
When rolling out dough, divide into three large balls. Roll into circle, cut like a pizza, and roll each piece into crescent roll, large end to small end. Place on greased cookie sheet to bake.
Large recipe.
Cook at 350 about 10-12 minutes—till brownish.
